Extend timeout for ci test to prevent failures

Evie Wright requested to merge extend-ci-timeout into main

Pipeline failures due to timeout are experienced on the FVP runs that test SME kernels, due to the number of tests now included for this job. Increasing this timeout to 2h provides sufficient time for the tests to complete and pass.
